Water has high surface tension; meaning it is adhesive and elastic. It tends to  aggregate in drops rather than spread out on a surface as a thin film.

Water's high surface tension allows the formation of waves and water droplets. It allows plants to absorb water from their roots and spread it to their leaves. It also helps in the movement of blood through tiny vessels in the bodies of some animals.
